I'm okay - but people here are being attacked by the minute. We are down to two in the 'macella' where we make the salumi - me and Alex - Mario, seventy eight, and Luciano, in his sixties, are both taking the day off tomorrow to get over their flu quickly. Monia, one of the line cooks at the restaurant is out, as well as the chef, his wife, the pastry chef, and two servers. Guess what that means??? More work for me...YAY!!!

So...now it's like this. Wake up @ 5.30 - in macella by 6 (AM that is!). Work till 9 - go get a coffe in the restaurant. Work till 11 - rest one hour - go to restaurant to work lunch service - clean up - go to sleep till 7 - work dinner service - clean up - go online - go to sleep = same thing next day - Monday - Saturday!! Sunday only in kitchen!!
Fun huh!?!
Note: Not complaining at all - this kind of work builds character - that's at least what everyone else says!!
