So HE is on this huge health/fitness kick right now. With the Krav Maga center down the street in Sherman Oaks, HE's been working hard at getting in shape and eating well too. Note: SHE mentioned getting in shape and NOT losing weight. Losing weight is WAYYYY overrated! (or so HE says!)
Dinner for the last three nights has been nothing more than salad and some type of protein. Last night, for the second night in a row, HE made this amazing Grilled Marinated Chicken Tenderloin over a plate of fresh greens. I'll jot down the recipe below. Do try it!
Tonight WE changed it up a bit. SHE had a salad with tuna fish & hard boiled eggs and HE had a salad with two over easy eggs and mini Babybel Light Cheese (the one in the red wax!).
Here's the recipe for the Chicken Marinade:
- 1# Fresh Chicken Tenderloins
- 3T GOOD Balsamic Vinegar (I really like the one you get at Costco for this)
- 1T Virgin Olive Oil
- 1t (heaping) Dijon Mustard
- .25t Cayenne Pepper
- .50t Smoked Paprika
- t.t. Fresh Cracked Pepper
- t.t. Kosher Salt
In a bowl HE layers the chicken so it is all in one layer. HE generously seasons the chicken with salt and pepper. HE then adds the dry ingredients and follows with the wet ingredients and mustard. HE thoroughly mixes all of it together and lets it rest for at least ten minutes. HE then grills the chicken on HIGH for about 8 minutes total but HE says to not let the chicken get to charred.
