My bone finally came in today. I am so happy!! We use these horse bones, taken from the shank, to check the quality of our different cured meats. The tip is inserted into the cured items, at certain spots as to not destroy the meat, and then the bone is put close to the nose. A rich, good scent should be sensed from the product. I got my bone!!!!
On to other news...I am going to Firenze later on today. It should be a great time. Lots of eating and drinking and good times. Look forward to some great photos!
